Cauliflower Rice

Rice was the hardest grain for me to eliminate from my diet because I was addicted to eating sushi and rice with curry. So I faced a small problem: if I was going to embrace the Paleo lifestyle wholeheartedly, I needed to find an alternative to rice. The answer for me is this cauliflower rice.

Recipe contains:

  • 1 cauliflower, florets and stalk roughly chopped
  • 2 tablespoons coconut oil
  • sea salt and freshly ground black pepper

Cauliflower rice works well with curries, braises, even as a substitute for sushi rice (you just need to bind it with avocado and a little tahini). The Paleo diet eliminates grains so that our bodies have the opportunity to find a healthy balance in weight, energy levels, and general well-being.

Place the cauliflower in a food processor and pulse into tiny, fine pieces that look like rice.

Place the coconut oil in a large frying pan over medium heat. Add the cauliflower and lightly cook for 4–6 minutes, or until softened. Season with salt and pepper and serve.
